What's for Dinner Challenge- Chicken Rochester

by Bill Ledingham
(Sydney Australia)

My first day of Chef Todd's 5 Day Dinner Challenge was yesterday and it was a blazing success!

I made the Chicken Rochester. After trimming and flattening the chicken breasts,

I made up a cornstarch slurry as per your video (with chicken stock) and added it to thicken the sauce to the nappe stage.

I noticed that there was no recipe to follow just suggestions for ingredients, so I took your advice and TASTED the sauce as I went along and adjusted as need be.

The upshot of it all is that the meal was absolutely delicious!!!! My wife said the sauce was so good you could just about drink it! She took the remainder of the sauce to work today along with the left over noodles.

So thank you Chef Todd!!!!

Bill-
Hooray for you, mate! I love hearing cooking success stories like this. The sense of pride I get from your email is obvious. Cooking is so much more fun when you create it yourself, with the ingredients you want.

When you complete the 5 day challenge, look back on your favorite dishes that you created. Think about what worked well for you, and what didn't. Now, expand on it. Keep the methods that you've learned, and change the ingredients and seasonings. Now, you're cooking with style!

Thanks for sharing the success. I'm proud of you too!

Chef Todd.
