what red wine would go with your Mole Pesto Shrimp?

I don't drink and I don't have a clue about wine and I'll be making Mole Pesto Shrimp for my girlfriend this weekend.


I'd pick a deep, Spanish, South American, or Portugese red wine.
Look for a Malbec or Temprenillo grape. For domestic wines, I'd try a pinot noir or Cabernet Sauvignon.

However, if you're not a wine guy, don't pretend to be. If you want to impress your girlfriend, buy a some inexpensive sangria and add sliced lemons, limes, oranges, apples, cherries, and let it sit for an hour or more before dinner.

It's a sweeter, fruitier drink that will offset the muddy and spicy flavor of the mole pesto, and can be done with non-alcoholic red wines as well.

I made a sangria with tempranillo wine with peaches, raspberries, lime, lemon. guanabana pulp, pomegranate ginger ale, a little bit of strawberry/banana/orange juice, and strawberry/banana/orange juice ice cubes.

I tweeked the Mole recipe a bit by adding some Mrs.Dash "bold and spicy, some more crushed red pepper flakes and more cayenne red pepper.

Let me tell you after dinner I was attacked in a very good way and I will be "mole-ing" up other sources of food.
