What Cooking Classes do you recommend?

Austin, TX has many cooking schools and I've attended two classes recently: Advanced Knife Skills and The 5 Sauces.

Whole Foods Market, HEB Central Market, TCA, CAA, Le Cordon Bleu, Williams-Sonoma, and several other schools offer classes - so I should be able to get a one shot class of whatever you suggest.

P.S. I've already purchased four of the five cooking books you mentioned on the interview I found of you on the internet:
1) Le Repertoire de La Cuisine
2) Food Lover's Companion
3) On Cooking (only $20 used! good notes in it too)
4) Professional Baking

What was the fifth?

Cooking Classes

I recommend that people build a good basic knowledge of the techniques and science that goes into cooking. You can't just pick up a guitar one day and play pleasurable music. You have to learn the chord progressions and fingerings. Same with cooking. I'd start with knife skills and get plenty of practice cutting things consistently, then classes that would study the transfer of heat like roasting, braising, sauteeing, steaming, poaching, etc. Then, learn all you can about how to make different sauces and how starches thicken liquids. From the basis of these three studies, you can branch out to additional and more complex techniques and ingredients.
