I randomly stumbled upon your site/you tube channel while fumbling across the internet like a pinball on crack. It has changed everything. In a mere week I have vastly improved my cooking and couldn't be happier. I feel as if all those wasted hours of the food network on my DVR have eaten tiny pieces of my soul... not to mention ruined countless meals.
I wanted to take a moment and truly thank you for the opportunity to really learn how to cook from an understandable and reproducable method.
The knife skills alone have been a blessing. I spoiled myself and got a really nice knife and have finally found use for the paring knife that "decorated" my knife rack.
My only real complaint is that I can't shake this underlying desire to attend culinary school now... A slightly different direction than my current career as a paramedic. On the plus side... At least the tissue and blood on my clothes would be from an animal. I'm just kidding.
