The Best Garlic Bread?

Is it true that in Italy they make the garlic bread nice and soft without spreading great dollops of fatty goo on it?
Chef Todd Says:
I can't speak for Italy, but I do know there are an endless number of ways to make anything in the kitchen, garlic bread included.
I like to make a compound butter from fresh basil, oregano, and garlic. I whip butter in my mixer with the herbs, then roll it into a log in a piece of wax paper. Freeze it, then cut slices for garlic bread in the future.
Or, when making my own yeast bread, I'll add olive oil, basil, oregano and tons of garlic right into the dough. Then, when it bakes, it is still soft without having "goo" spread on it.
