Rolled oats vs. Quick Oats in Cookies

I like to make oatmeal cookies, but some recipes call from old fashioned rolled oats while others ask for quick oats. Does it really make any difference which one I use?

After rice, oats are the most widely used whole grain in the American Diet.

An oat groat is the whole oat kernel with only the husk removed. It contains both germ and bran.

Steel-cut oats (Irish oats) are toasted, cut groats.

Rolled Oats or Old Fashioned Oats are groats that have been steamed, then rolled into flat flakes.

Instant oats are partially cooked and dried before rolling so they only need to be rehydrated.

It shouldn't make a big difference which oats you use in cookies. However, instant oats need less moisture to be softened. Rolled oats in your cookie formula will be slightly drier and chewy. Instant oats will be softer due to their par-cooking.

Ultimately, the choice is yours depending on your personal preference in oatmeal cookies.

quick oats in coffee cake recipe

I just came across a recipe for a coffee cake requiring quick oats...not old fashioned oats.
I had two containers of old fashioned oats but decided I should go ahead and purchase a container of quick oats. Do you think the traditional oats would have made it not as smooth? I am wondering if quick oats is recommended for cakes whereas old fashioned may be the best for cookies? Thanks so much.

is there a difference?

i baked with quick oats instead of rolled oats is there a difference!? i thought they were the same thing.. my unbaked fudge cookies tasted floury and dry

I tried them both this weekend and I see the difference. The quick oats are great in pancakes and waffles but the old fashioned are better for cookies. Thanks, Chef Todd. You are my inspiration.
