Potato Crusted Chicken

by Chef John
(New Jersey)

1) Pound out chicken breast until thin.
2) Season how you like (Salt Pepper)
3) Pan sear until golden brown 3/4 of the way cooked.
4) Place on baking dish.
5) Add 1000 Island Dressing and crumbled up Sour Cream & Onion Potatoe chips.
6) Bake at 350 for 10 minutes
7)Serve how you like. (I like it on a toasted bun with lettuce & tomatoes, swiss cheese & bacon!

Or how about this=

1) Make a sandwich using Plain Texas Toast, the thick kind, and sliced Mozzerella cheese.

2) Mix up 3 eggs, parmasean cheese & fresh parsley.

3) Dip sandwich in egg mixture

4) Add clarified butter to medium hot pan and grill sandwich on both sides.

5) Cut on a bias and serve on plate by opening up sandwich and placing french fries in between the 2 slices of Grilled cheese!

ENJOY!
