One Dish Dinner Success Story

This one dish dinner success story almost wasn't, but thanks to not giving up, I prevailed and learned something in the process. Here's my harrowing tale of how I got there:

I wanted to try the Seafood Tetrazini method today, so I bought an "All Purpose" aluminum pan with a clear plastic lid at my local grocery chain...
(It was all they had.)
I assembled what looked good to me (basically the same as the video, with the addition of Old Bay and scallions), and stuck it in the oven...

About 25 minutes later, I opened the oven - and the plastic lid had melted! It didn't drip into the pan, but shrunk to about 1/4 its size and stuck up in the air at one corner!
In a panic, I pulled the pan out, took off the plastic, remixed the ingredients as best I could, covered the pan in aluminum foil and stuck it back in the oven for about 20 minutes...

Much to my surprise, it worked!
Aside from a few noodles (actually, thin spaghetti broken in a towel like in the video) not getting cooked because they hadn't been in the liquid, it came out pretty good!

Thanks, Chef Todd, for:
#1 getting me to try to cook something for myself (most of my meals come from the frozen food section - but I'm working on it!).
and
#2 the confidence to not panic and toss everything in the trash and give up when things don't work out perfectly.

After watching your series of videos, some several times, the veil of "mystery" over cooking is being lifted - and I'm anxious to try lots of other things!

Ron - I have absolutely nothing to add because you said it all. Your thought process was sound (in realizing that the dish needed to be covered while cooking) - that's cooking method. And when things didn't go just as you planned, you used your eyes and intuition and found a solution. I love it! You are really cooking now, Ron. Can't wait to hear more.

It wasn't my fault! The pan said, "All-Purpose Oven Pan with lid", and didn't say anything about not using the lid in the oven. I guess they didn't know what a complete Newbie like me was going to do with that information.
(Grin)
Since then I've been using a Pyrex casserole dish and aluminum foil. The chicken/rice/orange juice meal that Chef showed in his first "One Dish Dinners" video was a complete success - even without the "Space Age Pan"!
(Sorry, Chef, if I just cost you some sales!)

I have since completed 2 or 3 of the 5 Day Challenges, making subtle changes in ingredients to suit my taste - and for the most part they have also been a success (except for Rookie Mistakes here and there; not the Method, the Execution. I could write a book...).
I even used the tomato concasse method for my sauce tonight, using my sister's fresh garden tomatoes [and] whipped up a home-made Balsamic Vinaigrette with garlic, oregano and basil for my side salad.
What a difference fresh makes compared to canned!

Again the greatest lessons one can learn from Chef Todd are:

* understanding [why] someone is doing something in a recipe or cooking show.
(I'm now constantly telling the TV, "That's not right! Why are you adding fat to a cold pan!? "Why are you using so much oil to saute!?" "That's not an efficient way to dice onions!" etc.)
Heh...

* opening up the mind to the idea that one can do things their way instead of the "official" way with equal - or better - results.

* not being afraid to [try].
Cooking is no longer some "Big Dark Secret" once one understands basic Methods.


So, now I'm eating healthier (nothing from the frozen entree aisle in a month now), learning new skills, and am much more comfortable in "that room" than I have been my whole life.
I used to "brag" that I didn't even know if my oven worked or not. Now I "brag" that I haven't used my microwave in a month!

I'm a happy camper...

But one major disadvantage to all this new knowledge is I have a LOT more dishes to do now!
