What I've learned from this website/series of videos:
1) Don't be afraid!
I have made more rookie mistakes than most, and I'm still here plugging away.
As Nietzsche said, "What doesn't kill you makes you stronger". This is especially true in the kitchen.
Really, what's the worst that can happen?
You really really mess something up and completely ruin whatever products you used at the time - so you throw the whole thing in the trash and order a pizza.
Next time you do it a little differently, remembering what worked and didn't work - until eventually you are satisfied with the result.
2) Cooking is not some "Big Secret".
Once you learn basic Cooking Methods and Knife Skills a whole mew world opens up to you.
3) Watch all of Chef's videos!
Some may seem irrelevant, silly or redundant at the time - but they are designed to give you the "Big Picture".
It took me a while to Get That.
4) I finally learned how to properly dice an onion!
This one lesson alone was worth "the price of admission".
5) Don't give up!
