Making Leftovers into an Omelet Recipe

This omelet recipe came from necessity. I was hungry and it was breakfast time. I decided on an omelet and had my eggs cooking in the pan before I checked to see what was in the fridge to add. Cheese? Out of it. Meat? None left. Not a vegetable to be found.
I was a poor college student at the time and I basically had condiments and leftovers. In a flash of genius(?) I added the leftovers from a curry dish I had made the night before. (potatoes, chicken, vegetables and curry sauce) To my surprise, it was actually very good! I ate it with leftover rice. The spicy taste of the curry blended well with the mellow flavor of the eggs.
A few weeks ago I was eating at a Thai restaurant and ordered what was basically a dressed up version of my own home experiment- veggies and curry potatoes in a fluffy egg shell.
Great minds think alike!
