Make Your Own Lucky Seven Salad

by Patty
(Cary, NC)

Here's my favorite salad making method, I call it my Lucky Seven Salad:

1. Pick a Base (or 2)
Veggie – Leafy Green
Grain – Quinoa
Pasta – Brown Rice

2. Add a Protein
Salmon, Shrimp, Chicken, Legumes (Beans)

3. Add a Bonus Veggie
Peas, Broccoli, Cucumber, Red Onions

4. Add Something Sweet
Chop up a fruit or even a cooked sweet potato

5. Add Crunch
Nuts, seeds, even chopped cauliflower or carrots – anything that crunches!

6. Add an Herb like Rosemary, Basil, Cilantro or Chives

7. Add a Light Dressing and TOSS
(of course you can add more/less depending on YOUR taste and what you have)

SAMPLE RECIPE
Quinoa
Black Beans
Cucumbers
Almonds
Cranberries
Cilantro
Toss lightly in olive oil –S & P to taste

Thank you Patty!
That's a "recipe" written the way I like to see it, plenty of personal creativity to add.

You could make a week of meals on your one idea.

Chef Todd.
