Make this Chicken Recipe Tonight: Mango Chicken with Quinoa

This mango chicken recipe, served with quinoa makes a great presentation!
For the chicken:
Saute chicken in olive oil, deglaze with mango nectar. Add a handful of sliced onion and a couple of spoon fulls of sour cream, to taste. Simmer until the onions are cooked, but don't burn the mango juice.
If you want, you can singe a piece of red pepper to bed the chicken on. It adds some flavor, texture, and color.
Quinoa:
Cook quinoa with chicken stock. I seasoned with chili powder and garlic salt. When the quinoa is close to done, add a hand full of peas. I used frozen, but I'm sure fresh would do fine. Probably taste better too.
My wife thought this was pretty great, the sweet sauce gave it kind of tropical feel. We had left over quinoa, and it kept pretty well.
