Looking for Aioli Recipe Ideas

by Kent
(saint ignace, mi.)

I need a new aioli recipe idea. What ingredients mix well with mayonnaise?

Chef Todd says:
Kent - that's a great question because aioli is a great place to get creative. The most famous aioli is remoulade: capers, red onion, worchestershire sauce, tomato paste, and cayenne pepper. It's also known as "cajun cocktail sauce" and is great with shrimp cocktail. I'm looking forward to reading other suggestions that people have tried. What other ideas are out there?

Aioli Ideas
by: Chef Tina

I usually make my aioli fresh (instead of using mayo) then add the additional flavors:

Pesto of any kind, add parmesan cheese and bake atop any white fish fillet.
Kalamata olive tapenade
Chipotle in Adobo for a spicy aioli
Chili-Lime for a tangy spicy aioli
Roasted garlic with a squeese of fresh Lemon

Fresh Aioli:

3 whole eggs
1Tbsp Fresh Garlic
1-2 tsp salt
3 Tbsp Lemon juice

Whirl in food processor
With motor running slowly add
2 cups Neutral Oil (canola, soy, etc)
Until consistancy is thick (like Mayo)
Readjust seasoning or Lemon juice to taste.
Will keep for a few days covered in refrigarator.
