How to Saute Veggies

I watched the Sauteing videos and saw how to saute protein products, but my question is: Are there any specific things to know when it comes to sauteing veggies that differs from the methods used to saute protein products (meat and such)?

Yes, there's one basic difference between saute of vegetables and proteins. Protein products coagulate, they stiffen and shrink. Cooking protein under any method is designed to coagulate proteins. Vegetables don't have protein like a chicken breast. The goal of sauteing vegetables is to tenderize structure and caramelize sugars. This is usually done under high heat, and usually accompanied with some type of liquid to cool the pan and poach the veggies in a moist fashion.
