While tempered chocolate is useful, how do you make a ganache?

I just had this conversation last night with my Executive Chef at my catering company.
We needed to prepare Chocolate Dipped Strawberries for 100 people for a wedding reception. My suggestion was tempering the chocolate so that there would be a crispy shell. His method was to make ganache so it would stick to the strawberries and be a creamier coating.
If you put two chefs in a room, you'll get at least two opinions. I never second-guess Chef Rasor, so ganache it was.
