How to Make a Sweet Tomato Sauce

Dear Chef:
Good day!

Can you give me some technique on how to make tomato sauce not too sour and runny in texture.


Dominic-
I hate to over-simplify, but if something is too sour, I'd use sweeter tomatoes. In the absence of a better product, you can add a sweetener like sugar, agave nectar, or even puree of a sweeter vegetable like carrot or beet to sweeten naturally.

You can increase the texture of the sauce by adding something that is thicker than your tomato puree. Perhaps tomato paste, or again a vegetable puree that is thicker than the tomatoes, perhaps some garlic paste, or minced sundried tomatoes that would then absorb some of the liquid when reconstituting.

You can make a thicker Pink Sauce by adding a thick Alfredo sauce to your thin tomato sauce, giving you a thicker, pinker, more cheesy combination.
