How to Cook Fish in the Oven?

I am wondering how to cook fish a specific way: What's it called when you put fish and other ingredients in Parchment Paper and bake it? Maybe this would be a good "Cooking Coarse" video. Also, what's good with it?
I would love some ideas on a list of ingredients that might work with this cooking method.

Wrapping fish in parchment and cooking under dry heat is called "en papillote". The paper (or tin foil for that matter) is used to retain moisture, steaming the fish.
