How do you recreate a dish without a recipe?

I collect recipes from all over the world and to recreate a dish I go back to the recipe for review. I do like how you explain cooking and most of the time I also cook by using similar methods...the Force, etc.

I just want to know how you can recreate a dish without a recipe..if you do recreate them.

Creating a dish without a recipe is easy. It's up to your creativity and imagination. RE-creating a dish without a recipe is a different challenge. Here, you need a good sense of palate to recognize the flavors; a good background in basic cooking methods to identify how you suspect things were made; and the creative mind to try different combinations to achieve the result. To continue my analogy, an accomplished guitarist can recreate music he heard on the radio because he knows what the chords sound like, the picking or strumming needed, and an ear for the end result.

The short answer is, that's is a continual journey to learn about ingredients and methods until you can interpret any dish like a musician can recreate music.

i keep mine handy just incase

i like to keep a recipe handy until you really i really build my skills (senses,eye and etc).i still do try not to look :). i also use them for inspiration to get an idea on what to make.
