How do you fix a cheese sauce that tastes like flour?

by Erica
(Doerun, GA)

I tried to make homemade mac and cheese the other day. I started out making a roux and "thought" I was doing everything right. I added the cheese at the end and it looked really good. But when I tasted it, it tasted like flour. I was just wondering if the sauce could have been saved and if so how? I would like to make this again, but I want to get it right.

Chef Todd Says:
The protein in the flour gives it the starchy taste. When making roux, you have to cook the proteins out of the flour. You'll know this has occurred when the yellow roux turns bubbly white and gives a nutty smell.

Roux and the resulting white sauce (bechamel) is the foundation to your cheese sauce. Be patient in preparing your roux, the rewards will be a velvety, complex sauce.
