How can I best add flavor and seasoning in cooking?

Flavoring and seasoning in food is very important. I am somewhat familiar with how certain herbs and spices can add flavor or season to a dish. Is there some cooking book out there that goes over how certain ingredients other than herbs and spices can be used to add flavor or seasoning?

For instance, brining chicken in orange juice is not something I would have normally thought of doing. But supposedly, it adds a lot of flavor to chicken. I'm sure there are other creative ways to use other food items in cooking and would like to learn more.

Seasoning vs Flavoring

Dean-
Thanks for your great question. Remember, there is a big difference between seasoning and flavoring. Seasoning is enhancing the natural flavor of the food, flavoring is changing the flavor entirely. Generally, herbs and spices season; sauces and marinades flavor.

That being said, try "The Flavor Bible" by Karen Page. It's not a cookbook, but a reference to seasonings and flavorings.
