Grilling Tip for locking in Flavor

by J. S-M
(Eugene, Oregon, USA)

What You'll Need.

What You'll Need.

This grilling tip works with anything you make on the grill. Use some common sense, but take some risk and you will be happy with the results.

You can make nearly anything more flavorful and juicy by wrapping it in aluminum foil before you put it on your grill and cooking it longer at a lower temperature.

Before wrapping whatever it is you're cooking, vegetables, for example - apply a thin coat of oil and rub them with the appropriate seasonings. I prefer to use peanut oil, but whatever flavors you like should work.

Foil Grilling
by: Chef Todd Mohr

An excellent idea, especially for quick clean-up. However, the previous comment is correct. You've taken away many of the advantages that the high heat of the grill brings. When you wrap things in foil, they steam. I use it often with broccoli. I'll wrap broccoli in foil and sprinkle a little water or an Asian flavored Hoisin or Oyster sauce, and put it on the edge of the grill. In the alternative, you could marinate whatever you'd wrap in foil, then place it directly on the grill to get the smoke flavor and caramelization of sugars.

Thanks for the tip!

Chef Todd.
