Fried Bananas

Make pancake batter slighty thicker by adding less water and add cinnamon. You want it like wall paper paste. Dip a whole banana until it is completely covered with pancake batter. Fry in deep fat fryer at 350 degrees until golden brown on both sides! Cut on a bias and serve with ice cream drizzled with fudge syrup and finely chopped peanuts!

That sounds fantastic! It's easy to do when you have a commercial deep fryer that will recover heat very quickly. It's a lot more difficult to do at home with a residential "fry-daddy" or pan of oil on the stove because the cold bananas drop the temperature of those little fryers quickly. Then, the product just marinates in hot oil until the fryer oil recovers.
As a healthier, safer alternative - Cut bananas lengthwise to make two "boats". Plate on chocolate sauce, and cover the banana with brown sugar/cinnamon mixture. Now, brulee with a torch or put under the broiler for the crunchy brown sugar coating. Top with whipped cream.
