Easy Shrimp Skillet For One

I was in the mood for shrimp tonight, so I grabbed a handful of frozen ones, put them in a bowl and ran cold water over them. I also put the skillet on the stove, and turned it to medium-high. While the pan was getting hot I diced up a slice of bacon and about a half a shallot.

I cooked the bacon in the pan for a bit, and once it released some fat in the pan I tossed in the shallot.

I let the shrimp cook just a bit and then de-glazed the pan with some shrimp broth I had made earlier in the week.

I let it cook down, scraping all the fond, and then added a squirt of lemon juice and some dried parsley.
I tossed in some penne I had left over and let everything simmer until the shrimp were done and the penne was hot.

Very fast, easy - and tasty!
It took about 10 minutes from walking in the kitchen to sitting down and eating...
