Easy Peach Napoleon

Last night's quick and easy improvised dessert was a Peach and Chocolate Napoleon. There is no recipe, it was created by what I had on-hand at the time.

1) Cut a peach in half, remove the pit, and slice as razor-thin as you can. Serrated slicing knife works well for this soft item.

2) Melt some chocolate chips in the microwave, soft and slow as not to burn. Microwave for 10 seconds at a time, stirring in between.

3) Place a small dollop of melted chocolate on the center of a plate. Plate a graham cracker on top of the chocolate to anchor it on the plate.

4) Add small dollop of chocolate on top of the cracker, then fanned sliced peaches, then another cracker, more chocolate, more peaches. Another cracker, chocolate, peaches.

5) Top with sugar and brulee with a torch.

This can be done with any fruit, and any type cracker, cookie, or slices of cake.

it is just peachy.....

instead of chocolate i would use some nutella it is yummy and quick and maybe to a peach foster.

Peach "S'mores"

I think that looks really light, and a perfect summer end to a meal.
For something just a bit more "robust" I do a "S'more" recipe with oatmeal cookies in place of the graham crackers, and use chocolate and raspberries. Melted marshmallows optional.
I think both these might be very nice garnished with a mint leaf or two!
