Cooking Challenge Day 5 Success Story

Today I tried the Italian (Protein) Marsala challenge with a chicken cutlet...

I coated the cutlet with flour on both sides and sauteed it (pan hot, oil hot).
I removed it from the pan, turned the heat down, and added a diced shallot, some sliced mushrooms and a small clove of diced garlic to the pan.
Once they started to sweat and turn translucent, I de-glazed the pan with some cold Marsala wine and let it evaporate.
I then added a little chicken broth, oregano and basil and returned the cutlet to the pan until the internal temperature reached about 155-160 and the pan sauce was thickened a bit.

I can't wait to try this method with another protein product. Now I need to try the Caribbean (Protein) Ochee with maybe shrimp!
