Chocolate cake with fondant icing
by Teresa
(Rome, Italy)
Hi!
I am thinking of making a chocolate cake with a fondant icing for my birthday, but I wanted to know what type of icing (the one you put before the fondant) goes well with a chocolate cake that I will then cover with the fondant icing?
Thanks in advance ;)!
Chef Todd Says:
You're exactly right, Teresa. When a cake is covered with rolled fondant, there needs to be another icing layer beneath the fondant to add moisture and texture to the cake. Placing rolled fondant on top of a chocolate cake will give you a very chewy and dry mouth appeal.
My favorite icing is Italian Buttercream, appropriate for you writing from Rome. Italian Buttercream is made by boiling sugar syrup to 240f / 115c and whipping it into egg whites. After cooling the mixture to below the melting point of butter, whip in cubes of room temperature butter.
This is an excellent layer of icing under your fondant.
Happy Birthday!
