Chicken Breast Success Experiment

My Fiancee and I are in the latter stages of moving to a new home, and she is stressed beyond belief!
So I decided to make her dinner tonight...

I sauteed a couple chicken breast cutlets in olive oil, 75% one side and 25% the other, then removed them and added diced shallot and mushrooms to the pan.
Once they were soft I de-glazed the pan with a little white wine. I let it reduce and release the fond, then added the breasts back into the pan and stirred in a little fresh lime juice and basil...

She thought it was very good!
And she is a former owner of a catering business in another state.

She is simply amazed that I learned how to cook something without a recipe!
