When I freeze puff pastry dough, should the egg wash & sugar be on or off?

Frozen Puff Pastry

Alex-
The very last thing you do to puff pastry is egg wash and/or sugar before baking.

To freeze the dough, make sure there are layers of parchment or wax paper between so they don't stick. Wrap them very well in air-tight wrapping and be careful not to crush any of the layers. Freeze laying flat on the shelf of the freezer.

Defrost at room temp.
