Hey chef I am in the market for a bbq grill which one do you use or do you have any recommendations?


Chef Todd Says:
I don't have one, or a specific brand to recommend. As with all kitchen equipment, the choices are up to you. Here's some things to consider:

Gas or Charcoal - Gas is quicker, easier to control heat. Charcoal imparts more of a BBQ flavor

Grill Construction- What's it made of? Just like a saute pan, the type of metal will help conduct heat or not. A cast iron grill will conduct more heat than stainless steel grills.

Grate Construction - The cooking surface is the grates. They also can be thin stainless steel or heavy cast iron. My grill has a three-part system of grates that are flat on one side for grilling fish and delicate items.

Lava Rocks - The barbeque grill heats a ceramic or natural rock layer above the gas. This dispurses the heat to cook evenly. The quality and heat retention of the rocks effect cooking.

Remember, stainless steel is the worst conductor of heat there is. Most inexpensive grills are made of stainless steel, which looks nice, but looses heat to the surrounding air, rather than your product cooking on the grill.
