Blanching...What is it all about?

Can you have a video presentation for blanching, Why is it?

Blanching, or par-cooking means cooking something only partially for a further preparation. For example, if you're creating a vegetable stir-fry, carrots are much harder than mushrooms, and would take much longer to cook. So, you'd blanch the carrots in some flavorful liquid to par-cook them to the softer consistency of the mushrooms, so they are the same texture in the end.
