An omelet recipe with Sweet Potatoes?

This omelet recipe is very unique but very satisfying!

First I chopped sweet potato and browned it in a little olive oil. Then I tossed in the pine nuts to let them toast a bit over low heat. I set those aside in a bowl while I browned the chopped chorizo.

Then I tossed the sweet potato, pine nuts, chopped dried tomatoes and shredded kale all in with the chorizo and heated. Finally, I added three eggs and finished my omelet.

I found it truly delightful. The omelet turned out really great. The kale, pine nuts and dried tomatoes worked really well together. But the "heart" of the meal was the chorizo and sweet potato combo; I think they are a perfect match!

Omelet?

Nicely done! That sounds delicious. However, it sounds more like a frittata than an omelet. Omelets should be thin, with fillings that don't tear through the egg. In the alternative, a frittata is any combination of items that are sauteed and egg is added to bind the ingredients like a pie. Omelets are generally filled, frittatas are sliced.

I like your procedure very much. I think I'll try it with ham, cheese, and broccoli.
