Kiwi Pancakes with Bacon

Pancakes are one of the most notorious breakfast recipes, but they don't have a reputation for being the healthiest breakfast food. With a little twist, pancakes can be a nutritious and trendy start to your day.

The secret? Next time you make pancakes, cut up bite-sized pieces of your favorite fresh fruit(s) and lightly mix them into the pancake batter. My favorites are strawberries, blueberries, bananas, and believe it or not, kiwis. If you want to take it a step further, try blending a few pieces of your favorite fruit in the batter for 1-2 minutes. This gives the pancakes a sweet, natural taste.

Not sure which syrup to use for fruit pancakes? Be creative. I have found that strawberry syrup and honey go well with almost any type of fruit pancake. I have tried the following fruits, and trust me, they're all tasty: strawberries, blueberries, kiwis, bananas, mango (with honey), plums, raspberries, and blackberries. If you want to indulge, ice cream is amazing with almost any fruit pancake!
