30 Minute Meal Tip: Good Preparation will save Time and Money

1.When I chop onions, celery, or peppers, I chop more of everything, then freeze small portions into ziploc bags, or plastic containers.

2.I buy my ground hamburger in 5-10 pound packs when it's on sale. I brown and season the meat. Sometimes I add celery and onions, or sometimes just onions. I split them up into 1# containers, label what is in there as far as seasoned, or seasoned with celery and onions and the date, and freeze.

3.When I make taco meat, I make 3-5# of hamburger at that time, What I have left over, I label, date and freeze.

It occurs to me that chopping extra, then freezing the leftover chopped onions, celery, and carrots (or peppers for Cajun trinity) would not only save time because you wouldn't have to chop more the next time, but if you were to sweat a mirepoix using previously frozen ingredients, they would soften a great deal faster because the cell walls would have been perforated by ice crystals. Breaking down that cellulose is the thing that takes the most time during a sweat, after all.

This could greatly speed the making of sauces, soups, and so on.

Thanks for the contribution. It's an excellent time saving idea to buy in bulk and pre-portion and freeze your burgers, then they're ready to go.

Also, don't forget how important portioning is. Burgers that weigh the same will all cook at about the same rate.
